Should I cook meat for my dog or give it to him raw?

Either or won’t have an impact on your dog’s health. Just ask yourself what his preferences are. People used to recommend cooking the meat to avoid parasitic contamination but nowadays the quality of meat should be good enough that this risk can be avoided.

Personally, I give my dog raw meat. I tried giving her cooked meat but he didn’t like it as much (she would leave some in the bowl). So I give her raw meat mixed with rice and lukewarm veggies, with 2 or 3 drops of oil (olive, sesame, etc). 1/3rd of each. And it works well for her.

I cook it, let it cool for a little bit, and then give it to him.

You should never give your dog bones because they could break them and hurt themselves in the mouth or throat. But cooked meat with no bones is absolutely fine (although beef and pork should be avoided because it’s very fatty). By the way the BARF diet for dogs is awesome.
