To be honest, I think he pees sitting down. His tray has quite high sides and I never see any marks on the wall or on the "sides" of the tray. I’m thinking about getting a plastic tub instead, but I’ll need to check the measurements first since his tray is tucked between the loo and the wall, and it’s a pretty narrow space.

NO, definitely don't go for a covered litter box; there's no need to put him under any unnecessary stress.
To stop litter being kicked over the sides, the best trick I've found is to buy those large plastic storage boxes (you can get them in the supermarkets or DIY shops) that are nice and big with high sides. This way, you avoid getting most of the litter on the floor. There’ll always be a tiny bit, though.
Plus, since Fluffy is a male, he might start peeing with his bum in the air (like my Oscar does), and in that case, you’ll really want those high sides. Not only do cats not mind a deep tray, but it actually makes them feel more secure (unlike having a lid). And the size of these bins is much more practical for a big lad like yours. I haven't used anything but these large storage boxes for about 15 years now.
